Our Story

Revitalizing, Growing, Teaching

Apalachicola Bay was once known as the Oyster Capital of the World. Fed by the lazy, nutrient-charged waters of the Apalachicola River, this pristine and unique Florida treasure is an untapped economic powerhouse, that properly managed, will drive the economic future of Franklin county.


The collapse of the wild oyster population has left residents dependent upon state support and food assistance exceeding $300,000 per month. Franklin county ranks not as one of the poorest counties in Florida, but as the poorest. Neither of these conditions needs to be the case. With determination and innovation, Apalachicola Bay can once again produce 90 percent of Florida's and 10 percent of the world's oysters.


Innovative oyster farming methodologies and strategies hold the potential to ensure that this unique resource is able to provide for generations of Floridians to come. It eases pressure on naturally occurring bay bars and provides an alternate means of living for residents who would rather farm than harvest.


We at Apalachicola Ice and Canning Company are committed to helping. We believe that transitioning a portion of the existing commercial fishing population to oyster aquaculture will benefit the community. There are unique challenges associated with an oyster farm startup. AICC is working to develop a boilerplate business plan that beginner farmers can take to a lending institution to seek start up funding. We are also working with local lenders to develop relationships and build an understanding of farm operational funding needs and revenue generation.

About

Apalachicola Ice and Canning Company, or AICC, is a small family-owned oyster farm operating on the beautiful and productive Apalachicola Bay of Franklin County, Florida. Originally founded in 1884 as one of the world’s first commercial ice manufacturers, AICC was reincorporated by the same family in 2018 as an oyster farm.



We operate our farm from the four (4) 1.5 submerged land leases we own at the Four Mile Authorized Use Zone (AUZ).  After exhaustive scientific research showed it to be the ideal location within Apalachicola Bay for growing oysters, the Four Mile AUZ was designated for aquaculture use by state agencies.
